Use as a cream in pasta dishes, soups and salads.
Makes 1 1/2 cups 


1/2 cup sunflower seeds
3/4 cup water
1 teaspoon salt
1/4 teaspoon freshly ground black pepper

Place sunflower seeds in a bowl, pour boiling water over them and leave them to soak for 2 hours (alternatively boil them for 5 minutes). Drain and rinse.

Place soaked sunflower seeds, water, salt and pepper into a high speed blender or bullet and blend until smooth and creamy. Use as a cream in pasta dishes, soups and salads.
